Meal 1: Rigatoni pasta with a spicy vegetable ragu. Garnished with grated Parmesan and fresh basil. Side salad with olives, cherry tomatoes and creamy Italian vinaigrette.

Meal 2: Panko-crusted vegetables with a creamy chipotle sauce and melted jack cheese. Southwest rice pilaf with chopped peppers, corn, tomato and cilantro.

Salad: Caesar salad with crunchy romaine lettuce, grated Parmesan cheese, garlic croutons, Caesar dressing and a lemon wedge.
