Meal 2: Chicken cacciatore – chicken thighs cooked in red wine, tomatoes, cured olives, onions, and peppers. Served with cheesy garlic orzo. Garnished with basil.

Salad: Crunchy romaine salad with marinated roasted cherry tomatoes, red onion, cucumber, and basil. Served with a balsamic vinaigrette.
