Meal 1: Vegetable soup with black-eyed peas, carrot, celery, and leeks. Served with whole wheat dinner rolls and butter.

Meal 2: Roasted Vegetables with chimichurri sauce. Served with roasted new potato salad and sautéed broccolini.

Salad: Mixed green salad with roasted yams, pistachio, and a sweet onion dressing.
