Meal 1: Chickpea stew with red peppers and summer squash over couscous. Garnished with fresh basil and feta.

Meal 2: Creamy Tuscan beans with mushrooms and sugar snap peas. Served over buttered penne and garnished with fresh parsley and parmesan.

Salad: Italian summer salad with romaine, radicchio, green olives, cherry tomatoes, red onion, pepperoncini and a smoked tomato vinaigrette.
