Meal 1: Smoked tofu and roasted red onions on a hoagie roll with cheddar cheese, pickled radish, little gem lettuce, and a green garlic and red pepper aioli. Served with potato chips.

Meal 2: Grilled eggplant, red bell pepper and mushrooms topped with sun-dried tomatoes, artichoke hearts, and olives. Served with white rice and sautéed green beans.

Salad: Mixed green salad with Parmesan cheese, apple, candied walnuts, dried cranberries, and creamy Italian vinaigrette.
