Meal 1: Beef and vegetable kabobs with onion, mushroom, pepper, and squash. Served with basmati rice and a tomato and cucumber salad.

Meal 2: Seared chicken breast with an apricot pan sauce and pistachios. Served with pearl couscous and mint.

Salad: Mixed green salad with chopped tomato, grated Parmesan, garlic croutons and a Mediterranean vinaigrette.
