Meal 1: Sweet potato tostadas with refried merlot beans, avocado, shredded lettuce, and pickled red onion. Garnished with Mexican crema and cilantro.

Meal 2: Chickpea and roasted tomato stew with olives, bell peppers, carrot, celery, and onion. Garnished with parsley.

Salad: Farmhouse salad with red leaf lettuce, shredded carrot, purple cabbage, cucumber, cherry tomato, and buttermilk ranch dressing.
