Meal 1: Roasted vegetables and chimichurri sauce with red bell pepper, zucchini, carrots, red onion, and potatoes.

Meal 2: Vegetable stew with butternut squash, chopped tomato, ginger, garlic, and peppers in a coconut sauce. Served over long grain white rice. Garnished with cashews.

Salad: Charred onion and romaine salad with roasted beets, almonds, pecorino cheese, and a sherry vinaigrette.
