Meal 1: Stuffed chicken breast with roasted pepper and garlic in broth. Side salad with cherry tomatoes, olives, grated Parmesan, and a pesto dressing.

Meal 2: Carne asada bowl with roasted corn, avocado, pico de gallo, and a cilantro-lime vinaigrette. Served over farro and garnished with cilantro and lime.

Salad: Butter lettuce salad with cucumber, sliced red onion, purple cabbage, carrot, and a ginger-carrot vinaigrette.
