Meal 1: Stuffed pepper with rice, roasted garlic, parsley, and sun-dried tomato. Side salad with cherry tomatoes, olives, grated Parmesan, and a pesto dressing.

Meal 2: Veggie bowl with farro, roasted corn, onion, squash, avocado, pico de gallo, and a cilantro-lime vinaigrette. Garnished with cilantro and lime.

Salad: Butter lettuce salad with cucumber, sliced red onion, purple cabbage, carrot, and a ginger-carrot vinaigrette.
