Meal 1: Vegetarian lasagna with spinach, carrot, sweet potato and onion, and ricotta and Parmesan cheeses. Served with a side salad of pepperoncini peppers, cherry tomatoes, olives, and a creamy Italian vinaigrette.

Meal 2: Sweet potato, and barley soup with power greens (baby chard, kale and spinach). Served with dinner rolls and a sage-honey butter.

Salad: Baby spinach salad with apples, cranberries and walnuts, and an apple cider vinaigrette.
