Meal 1: Veggie Pho with thinly sliced shiitake mushroom in veggie broth. Served with rice noodle and garnished with bean sprouts, lime wedge, cilantro, basil, green onion, sriracha, and hoisin.

Meal 2: Eggplant cacciatore with button mushroom, sweet onion, and julienne bell peppers. Cooked in a smokey crushed tomato sauce. Served with creamy parmesan polenta.

Salad: Apple walnut salad with crunchy romaine lettuce, dried cranberries, and a sweet sherry vinaigrette.
