Meal 1: Roasted vegetable puff pastry with peppers, red onion, eggplant, mushrooms, and feta cheese. Served with a side salad.

Meal 2: Fried tofu sandwich with a spicy mayo. Topped with a coleslaw on a sourdough roll. Served with sweet potato wedges.

Salad: Baby arugula and citrus salad with fresh herbs, almonds, feta cheese, and a poppy seed dressing.
