Meal 1: Tofu lettuce cups with hoisin sauce, sriracha packets, cucumbers, green onion, carrot, cilantro, lime wedge, peanuts, diced bell pepper, and ginger-scented white rice.

Meal 2: Veggie “meatloaf” with a sweet chili sauce, buttery mashed potato, and ginger glazed carrot. Garnished with parsley and crispy shallot.

Salad: Black-eyed pea and mixed greens with cherry tomatoes, chopped red onion, celery, roasted peppers, and avocado.
