Meal 1: Grilled eggplant with chimichurri sauce. Served with green beans and blistered cherry tomatoes.

Meal 2: Garlicky grilled squash crostinis with ricotta, and scallions. Side salad served with a roasted shallot dressing.

Salad: Cranberry and apple salad with radicchio, butter lettuce, Parmesan and a champagne vinaigrette.
