Meal 1: Mushroom and shallot ragu with creamy polenta. Garnished with grated Parmesan and parsley. Side salad with cherry tomatoes, olives, pepperoncini, and balsamic vinaigrette.

Meal 2: Baked eggplant in a tomato-white wine sauce. Garnished with grated Parmesan and basil. Served with sautéed green beans and buttered penne pasta.

Salad: Mixed green salad with Winesap apples, feta cheese, golden raisins, and an apple cider vinaigrette.
