Meal 1: Thai fried chicken with a lime dipping sauce, and an herb with sweet pepper salad. Served with coconut-cardamon jasmine rice.

Meal 2: Pork enchiladas rojas with Mexican crema and cilantro. Served with mixed summer vegetables.

Salad: Romaine and fingerling potato salad with fresh parsley and a Parmesan vinaigrette.
