Meal 1: Lemon garlic chicken with roasted new potatoes, cherry tomatoes, green beans, and a roasted garlic herb sauce.

Meal 2: Stuffed poblano peppers with ground beef, roasted corn, brown rice, and a spicy queso sauce. Garnished with cilantro.

Salad: Little gem and tomato vinaigrette salad with bacon, chopped heirloom tomatoes, rosé sweet onions, and roasted pumpkin seeds.
